Ingredients: (for 4 persons)
- 2 kg snails
- 4 garlics
- fennel (optional)
- Species: (coriander, chilli, black pepper and caraway)
Wash the snails in abundant water with salt until no slime comes out. Cover with water and cook with low heat until they leave their shell. Adjust the species previously mixed with salt in the mortar and cook until the snails darken.
